The rating are different. What are they made from? Obviously, plastic fittings are weaker than steal, and thick wall fittings are stonger than thin. If the pressure isn't marked on the fitting or package, get one that is.

If you are using PVC for your presure chamber, and steel fittings for your conetions, your PVC will give out before the fittings.

CO2 will not hurt any fittings that I'm aware of, but be careful how much pressure you put in your gun.
